Electric deck oven ideal for baking, pastry and pizza making.

The research and development have improved and optimized this new oven in order to get reduced the costs and the size.

The great flexibiliy allows the use each deck with separate regulation of power bewteen top and bottom of decks.

The quality of the insulation and the “smart” software optimize the use of energy available avoiding waste of electricity.

Wide selection of models:

ZE with doors 82cm

AE and BE with two or three doors of 62cm

FE with two doors of 78cm

All the models are available in four different lenghts with three, four or five decks.

The oven doors are opened by a lever for the models ZE, AE and FE while the wider BE are balanced opened.

It is however possibile to have the balanced doors on every model, and it is also optional to have insulated stainless steel doors, with or without inspection glass.

Every single component has been designed for maximum functionality and long-life, such as the electronic boards that now include new functions, so as to achieve unique performance on the market, and the fully stainless steel construction on both the inside and outside.

The heating elements are fitted from the side of the oven, a feature that guarantees a virtually infinite lifespan and avoids costly maintenance and oven downtime, as the po­wer section is carefully insulated from the heat and steam. The side where the heating elements are fitted can be cho­sen when installing the oven.

The control panel can be installed on the right- or left-hand side as desired, and features a separate board for each deck that controls temperature, baking time, top/bottom power ratio and front heat offset and ma­nages the steamer. Nonetheless, the true brain of the oven is the main management board at the top, which controls oven power consumption, automatic weekly start-up, and steam exhaust. The management board allows users to set the power in kW, so as to limit po­wer consumption, or increase power for baking at high temperatures or for cold doughs, for example frozen pizza or bread. A special smart function automatically allocates power where it is most needed, ensuring sta­bility and faster heat-up.

The bakery management option monitors power con­sumption of the entire bakery, allowing the oven to operate using the energy that is available at any given time. Another option is the “Plus 100” version, which can be used to program up to 100 recipes, each com­prising up to three baking stages, as well as automa­tic opening of the steam discharge valves. A “Touch” control panel is also available, featuring a 7” capaci­tive touch screen display that, as well as all the fun­ctions of the “Plus 100” version, can also export and import recipes with the simplicity and immediacy of the latest-generation technology, as well as providing a complete overview of oven operation and status.

All of the ovens can be fitted, even after installation, with the practical S2 elevator (or S3 for models F and B) to make loading and unloading much easier and safer. The setters are lifted using a simple and light balanced mechanism, meaning costly motorised peels are not needed. When the operation has been completed, moving the setter to the fully raised position frees up space in the bakery.

The elegant appearance of the “Rustico” line has been designed to suit the fixtures in the bakery, meaning the oven can be installed in a place where customers can
see it. Available in the copper or black versions.
