The control panel can be installed on the right- or left-hand side as desired, and features a separate board for each deck that controls temperature, baking time, top/bottom power ratio and front heat offset and manages the steamer. Nonetheless, the true brain of the oven is the main management board at the top, which controls oven power consumption, automatic weekly start-up, and steam exhaust. The management board allows users to set the power in kW, so as to limit power consumption, or increase power for baking at high temperatures or for cold doughs, for example frozen pizza or bread. A special smart function automatically allocates power where it is most needed, ensuring stability and faster heat-up.
The bakery management option monitors power consumption of the entire bakery, allowing the oven to operate using the energy that is available at any given time. Another option is the “Plus 100” version, which can be used to program up to 100 recipes, each comprising up to three baking stages, as well as automatic opening of the steam discharge valves. A “Touch” control panel is also available, featuring a 7” capacitive touch screen display that, as well as all the functions of the “Plus 100” version, can also export and import recipes with the simplicity and immediacy of the latest-generation technology, as well as providing a complete overview of oven operation and status.
