New generation, high performance rotary convection oven. Suitable for baking bread and pastries; especially suitable for delicate products thanks to the significant low speed air flow through the baking chamber.
Thanks to the small size it is the ideal cooking solution for small productions which want performance and cooking results like bigger, it can have a capacity from 9 to 11 trays, size 60 to 40 cm.
Fully stainless steel construction on the inside, heat exchanger located at the top of the chamber and ventilation with one high performance impeller. Powerful and effective steamer with two water inlets, positioned in the middle of the air flow, to ensure continuous steam production even at short intervals.
All the components are easily removable from the inside for cleaning or quick replacement. AISI 304 steel front panel for maximum life.
Insulation with three layers of rock wool and stainless steel panelling. Optional “Touch” controls with 7” colors LCD and capacitive touch screen offering the possibility to enter baking programs and automatic ignition times; on request, fan operation speed can be change and programmed by inverter.
The oven BOSS 9 can be powered by burner(gas or gasoil) or electric in BOSS 9 E version. Extremely compact oven dimensions and possibility of various configurations.
The oven can be placed on the appropriate support (with wheels as an option). The oven can be equipped instead with proofer, in other configurations can be assembled with the addition of static cooking chamber MR-2 model. (see configurations)
